Pretty much every country has its own cuisine and tasty dishes, but Japan occupies a special position: The Japanese love good food and at the same time are always ready to incorporate tasty foreign dishes into their own culinary offer (and to “Japanize” them in the process). Neither tempura nor curry nor sushi nor numerous other dishes originally come from Japan – but are particularly recommended there. For those who prefer to trust quasi-official bodies than our claims: As of November 2017, Japan has 28 three-star restaurants according to the Michelin guide, more top addresses to offer than any other country, with France being beaten by a narrow margin with 27. 3rd place: USA (14), 4th place: Germany (11), 5th place: China (10). Tokyo alone has twelve three-star, 56 two-star and 166 one-star restaurants.

But even more so than at the wickedly expensive end of the gourmet scale, the inclined visitor notices that the general standard of food in catering establishments is somewhat higher than what one is used to from the station pub at home. In Japan, too, you can eat too oily, too fatty, too lukewarm and so on – but it will happen less often than in many other places in the world. In this respect, it was obvious not only to focus one of the Japan documentaries in 2018 on food (this occurs in several episodes), but on the preparation of the same.

In this documentary episode, you will witness the preparation of several typical dishes and side dishes, and how they are cooked and eaten. There are insights into the Japanese kitchen culture that you will not find easily. fun fact: Interpreter and guide Keimy had negotiated in advance that we would be alone – otherwise filming would have been very difficult – and the first positive surprise was that we were not supposed to pay for three people, as agreed, but only for two. The second positive surprise was the friendliness with which we were greeted by cook Kishi and the meticulousness with which she initially explained the ingredients.

The actual cooking then took longer than expected, Kishi explains why at the very end of the documentary episode. Just this much: the course, which was designed for three hours, lasted a little over five hours, of which about four hours were used for cooking, which of course was complicated by my film work. As a result, the return to the hotel was delayed, the planned nightly bulk purchase of Donki and, as a result, my departure for Kawaguchiko the next day (I already reported on this in another fun fact). And you know what? The cooking course was worth every delay, I would do it again at any time, preferably privately
